Australia’s largest hotel operator launches new in-house food and beverage group – hospitality


Accor, the largest hotel operator in Australia and New Zealand, has announced a new in-house food and beverage group, Table For.  

Table For is designed to set new standards in culinary experience, creativity and commercial performance. Its first restaurant, Flaminia, will open at Pullman Quay Grand Sydney Harbour this summer and other concepts are expected to follow.

Table For will build on Accor, which has a portfolio of more than 440 restaurants, bars and cafes, with a focused investment in culinary innovation and guest experience.

Accor Pacific Chief Operating Officer Adrian Williams says they love the way culinary experiences bring people together, and Table For will take that to an entirely new level.

“This initiative unites the finest visionaries in food and beverage,” says Williams. “We are redefining what it means to dine in a hotel, and treating our restaurants and bars as standalone heroes that locals and travellers actively seek out.

“This is about celebrating creativity, elevating our guest experience and delivering real value for our partners. Through Table For, we’re reimagining existing venues, developing entirely new concepts, and delivering experiences that guests and locals will seek out, enjoy and remember.”

Table For will operate as a full-spectrum group, engaging internal experts across culinary, operations, design and guest experience, supported by select collaborators including hospitality luminaries Stefano Catino and Vince Lombardo of the Maybe Group and culture agency Example.

Table For Head Ben Creek says they are excited to moving into this next phase with even greater focus, after a tremendous period of momentum across their food and beverage portfolio.

The group is led by Creek who has two-decades of experience across three continents, including leading roles in some of the most globally recognised hospitality operators.

“Table For gives us the platform to launch bold new concepts, reimagine existing venues and stay ahead of the evolving tastes of guests and locals alike,” says Creek.

“Importantly, it not only sharpens how we operate and deliver, but also celebrates the power of collaboration in bringing great ideas to life.”

Creek will be joined by Chris O’Connor, a former chef and senior operator; Jenn Pride, a guest experience leader known for landmark venue launches at Merivale; and Culinary Director Rosy Scatigna, a globally trained chef.

Catino and Lombardo, who are driving forces behind award-winning cocktail bar Maybe Sammy, will lead beverage innovation and hospitality for the Table For portfolio, alongside alongside winemaker and sommelier Shun Eto. This marks the first time the duo has partnered at scale with a global hotel group.

Table For will not only service Accor-managed properties, it has been designed to support the group’s wider network of owners, developers and franchise partners. It will build on Accor’s recent momentum, including openings and collaborations across their portfolio, such as a $70 million transformation of Sofitel Sydney Wentworth which featured four venues by House Made Hospitality: Tilda, Bar Tilda, Delta Rue and Wentworth Bar.
