Hinchcliff House welcomes Principe Prosciutto di San Daniele to Australia – hospitality


House Made Hospitality’s four-venue destination Hinchcliff House is celebrating the Australian launch of Principe Prosciutto di San Daniele with a new snack and drink menu.

The menu draws inspiration from the iconic Italian prosciutto brand, which can only be made in the town of San Daniele del Friuli in Northeast Italy.

Available across Hinchcliff House’s Bar Mammoni, Lana, Grana, and Apollonia, the menu features a Widge’s gin and prosciutto-fat washed Negroni, which offers a savoury twist on the classic, with a velvety mouthfeel.

“We approached Principe Negroni the same way you’d pair a beautiful ingredient on a plate, respecting its flavour and letting it shine,” said House Made Hospitality Beverage Director Jason Williams. “Fat-washing Widge’s gin with Principe prosciutto gives the negroni a softer texture and a subtle savoury depth.” 

Alongside the hero negroni is the Melone Spritz (a liquid take on the classic rockmelon and prosciotto pairing) and the Monte Highball (made with Montenegro).

Available for pairing is a small menu of prosciutto-focussed snacks, geared towards each individual venue. At Lana, the prosciutto trolley promises tableside service with saltbush focaccia and whipped ssamjang butter; bar Mammoni will serve prosciutto bao sandwhiches and porcini arancini with prosciutto scacchiata; and Grana and Apollonia will serve raviolo fritto with truffle honey, quattro formaggio, and – you guessed it – prosciutto.

Hinchcliff House Executive Chef Alex Wong called Principe the “ferrari of prosciutto”.

“I couldn’t be more excited to explore new ways to honour this amazing product with Principe, the original prosciutto di San Daniele,” said the chef.

“It’s been fantastic putting our own spin on the Italian tradition of Aperitivo Hour whether it’s paired with ssamjang butter, topping a scallop or finishing a raviolo fritto. Principe prosciutto is aged slowly with just salt and time, as italians has done for centuries and is a best in class product,” he added.

Principe General Manager Susanna Polycarpou says introducing Principe Prosciutto di San Daniele to Australia through the Hinchcliff House Aperitivo Hour feels like “the perfect beginning”.

“We’re excited for Australians to experience the original San Daniele Prosciutto, made by craftsmen with pride and passion the traditional way – a delicate, savoury taste best enjoyed the Italian way: with friends, good drinks and pure pleasure,” she said.

The menu is available until Sunday 14 December.
