Chef Jeff Schroeter returns to iconic Darling Mills site – hospitality


The iconic Darling Mills site on Glebe Point Road is being transformed into a venue that’s equal parts French soul, New York edge, London polish, and a “dash of cheek”.  

Behind the reimagination of the site, to be called Darling Glebe, is acclaimed chef and restaurateur Jeff Schroeter (The Savoy London, Royalton Hotel New York, Bistro Moncur, Bayswater Brasserie).  

Schroeter is a quiet star of the Australian and international dining scene who has cooked for the likes of Queen Elizabeth II, Madonna, and former Vogue editor Anna Wintour. 

The opening, slated for February, will mark a return to the site for the chef, who says he was inspired to launch a restaurant that pays homage to its original ethos. 

He will transform Darling Glebe into a subterranean brasserie featuring a martini bar and a French omakase chef’s table.  

“This space is an heirloom to Sydney diners,” says Schroeter. 

“It’s always been one-of-a-kind and we’re proud to be its new custodians. 

“We want to honour it for what it is – a culinary icon of the city’s hospitality industry – and in doing so, welcome back those who loved it then, and invite a new generation to fall in love with its spirit now.” 

He will lean into the site’s history, continuing to showcase its unique features like the original convict-chipped sandstone and vaulted ceilings.

The restaurant will feature five distinct spaces, each offering a different experience.  

The signature martini bar will pour from late afternoon until midnight. Meanwhile, the main dining room will have a casual vibe for long lunches and dinners.  

The chef’s table, available for exclusive use, is a space where guests will be personally served by Schroeter, with a unique French omakase experience.  

There will also be a private dining room, and an underground private wine cellar event space.  

“You can drink and dine based on your own mood, the venue lets people have that type of freedom,” says Schroeter.  

Sarah Biswas (Odd Culture Group, Restaurant Hubert, Banksii) is on board as venue manager, and former Australian Bartender of the Year Charlie Ainsbury is curating the martini bar concept.  

Schroeter says he’ll also honour the site’s founding Adey family by sourcing produce from their Darling Mills Farm. He will also delve into their 35-year-old cookbook from time-to-time, to reimagine favourite dishes from the restaurant’s heyday. 

“This room has always told me what it wants me to serve,” says Schroeter. “I’m just here to listen.” 

Schroeter co-founded Beckett’s at the former Darling Mills site back in 2021. After successfully operating the venue for three years, he made the decision to sell out of the business to pursue his own interests.  

After it became available again, he was approached about returning, jumping at the opportunity.
