Mamas Dining Group’s latest venue, Disuko, is set to open on Tuesday 18 November in the former Madame Brussels venue.
With panelled Japanese red timber lining the walls, an eight-seat omakase bar, and a name meaning ‘disco’ in Japanese, the bar is geared up to emulate the essence of Tokyo’s low-lit, late-night lounges.
Mamas Dining Group CEO Thai Ho says the inspiration for the space was born from years spent visiting his family in Shibuya, Tokyo.
“The country instantly captivated me – its culture, cuisine, hospitality, and energy of the city is electric,” says Ho.
“Disuko is our way of bringing a slice of Shibuya life to Melbourne. Think neon, nostalgia, and nothing but good times. We wanted to create a space where the disco era of 1980’s Tokyo can live again, but this time, with a distinctively Melbourne heartbeat.”
A rotating display of vinyls partially lines the wall behind the impressive eight metre bar, alongside a significant list of Japanese sakes. Bar Manager Joshuiea Scott will be serving up highballs and house signature cocktails, including the Hana Nashi – a Roku gin, rose water, lemon, pear, and cloudy pear soda mix; Ginza Girl (Disuko’s take on the martini) with red shiso infused Grey Goose and Burmutton sake dry vermouth; and Shogun with green tea, lemon, yuzu syrup, and gingerbeer.
Heading up the kitchen is Head Chef Hoa (ex-Kisume, Nobu), who has worked alongside the group’s Creative Culinary Director Michael Stoley to develop a playful izakaya-inspired menu with smokey hibachi grilled bites, nigiri, and hot Japanese comfort food.

Mamas Dining Group, which announced the venue earlier this year, is also behind the likes of Hochi Mama, Straight Outta Saigon, Kiss and Tell, and Suzie Q.
